Sand salamander meat has high protein, helps to improve health, especially for the sick, women who have just given birth. Besides, this dish is considered as a specialty drink of gentlemen, help enhance the health and vitality for men. Salamander meat also helps to fortify the kidney, the lung, and the spleen; to cure arthritis; anti-pain and paralysation; anti-leprosy; and help to stabilize blood pressure.

Salamander is reptile which has living and reproduce habit as season, so in nature, they are few and rare in quantity. Recognizing the economic value of this wild species, now, Ninh Thuan people come across the idea of ​​building many salamander farms with the method of feeding naturally on the sand dunes which has achieved many successes. When bringing salamander to the farm, people still make them private living environment and protect them carefully. Because salamanders often dig and live in their burrows; hence, to prevent them may burrow deeply then escaping away, farmers must build underground wall by 1.5 meters, above the wall must also higher by 1.2 m, this makes salamanders are unable to climb out. Salamanders can be cooked into 7 dishes which are very stylish: salamander roasted with chilies and salt, roti salamander, salamander minced and eaten with rice cake, grilled chopped salamander, salamander salad, salamander cooked into rice gruel with peppers, and salamander roasted with guise leaves; these dishes will surely make unforgettable diners for visitors.

Salamander meat is as white as chicken, but sweeter, fleshier and softer. The bones are very soft, almost as cartilage. Its pale is very crispy; however, when cooking, it is often throw away because of not eye-catching. Roasted salamander is the dish which is the easiest one to cook and it is also the worthiest dish to enjoy. Firstly, we must choose the fat and adult salamander because if the salamander is too young, its meat is very friable, and not tasty. After cleansing skin, salamander is marinated with salt, chilies, and satay about 15 minutes and then baked on burning charcoal until its meat is firmer, slightly yellowing, sweet smell as salamander is ripe. During grilled period, we must attend to turn meat around regularly, unless it is easy to be over burned. Roasted salamander can be eaten with rolled rice cake or eaten with vegetables, vermicelli and rolled rice cake. Put salamander meat into rice cake, add a little of vermicelli, vegetables and then eating with tamarind fish sauce, there is nothing can be compared with it.

Salamander salad is also a popular dish to visitors. To make this dish, salamander meat is kept with its bones, then chopped, fried, and mixed with sliced ambarella or mango, roasted peanuts, mixed fish sauce, especially, it is must have leaves to fry with salamander; this leaf is like young Phyllanthus Acidus which lives in the cliff on dry land, it is fragrant smell but acrid. Salamander salad served with grilled rice cake, this cake is thick, a lot of sesames, fried yellow, you will eat them incessantly.

Grilled chopped salamander also use grilled salamander meat then mixed with a variety of spices such as chilies, onions, peppers, garlics, lards, and cooking oil. After that, it is may mixed with a few mushrooms and shredded botanical. Next, use thin rice cake and roll the mixture into rolls equal with a finger, then put them into the oil and fry. Grilled chopped salamander is used as a dish to drink; it is also as a delicious dish used with rice.

After the drink, gourmets will enjoy additionally a hot salamander porridge which helps anti-flu and nourishes the body very well. Salamander porridge is cooked very simple. Its meat will be crushed, often taken from rolled chopped meat. Before cooking porridge, salamander meat is also fried in cooking oil then boiled. Rice using to cook porridge must be the fragrant rice; soaked with water and then poured into the boiling broth pot; seasoned suitably with fish sauce, salt, monosodium glutamate, onions, and peppers; then, we will have a porridge pot delicious, fragrant, and moreish.

 In the evening moon, cool breeze, with friends, relatives, together sip and enjoy specialties from the sand salamander; it is crispy and delicious, then drinking a cup of beer. All of these will make visitors feel that there is nothing can be more interesting and more wonderful.
